Grilling PlanksWestern Red Cedar - Alder - Broadleaf Maple No one is absolutely sure who began using wood for cooking their fish and meats on. We do know that the Indians of our coastal regions used this style of cooking or drying on much larger planks of wood than what is available on the market today. We use alder for our barbequing, which leaves a lighter, sweet smoked flavor to the meats we use. Western red cedar is the most popular, giving a much stronger flavor to your meat or fish. General instructions for use is to soak the plank of your choice in water or perhaps wine or beer, one to two hours before placing plank on barbeque or in oven. A temperature of 375 degrees is the most commonly used temperature. |
